When Sergio and Mary Suarez decided to open Los Comales-Melrose Park in 1998, they drew from a variety of experiences to establish their restaurant concept. Los Comales-Melrose Park and Los Comales-Elgin epitomize multiculturalism by integrating the best aspects of Mexican and American communities and traditions to craft their delectable, authentic cuisine.

During his childhood in Mexico, Sergio learned the importance of hard work while shining shoes at just six years old. Despite never envisioning himself as a taqueria owner, Sergio's diligence and dedication paved the way for his success. Upon recognizing Sergio's intellect and perseverance, Camerino Gonzalez—owner of the original Taqueria Los Comales—approached him about opening a restaurant. With previous triumphs in small business ventures, Sergio's business acumen and work ethic positioned him well to transition into an effective restaurateur. Finding the ideal location for his latest endeavor in Melrose Park, where diversity was on the rise and a family-oriented restaurant serving premium, authentic Mexican cuisine was lacking.
